Ingredients:
-3/4 cup oil
-1/4 cup sugar
-1/4 cup balsamic vinegar
-1 (15-ounce) can black-eyed peas, drained and rinsed
-1 small can whole kernel corn, drained
-1 green bell pepper, diced
-1/2 cup diced green onions
-1 large tomato, diced
-1 red bell pepper, diced
-1/4 cup freshly chopped parsley leaves
Directions:
1. In a small bowl, whisk together the oil, sugar and vinegar.
2. In a large bowl mix together the remaining ingredients. Pour dressing on top of salad and mix well.
3. Serve alone or with tortilla chips as a dip.
