Turkey Chili

Ingredients:
· 1 cup chopped onion
· 1 cup chopped carrot
· 2 tablespoons olive oil
· 4 cups water
· 3 cups turkey meat (light and/or dark), shredded or ground turkey, cooked and crumbled
· 1 (16 ounce) can chickpeas (garbanzo beans), rinsed, drained
· 1 (16 ounce) can kidney beans, rinsed, drained
· 1 (10 ounce) can diced tomatoes with green chilies (Ro-Tel)
· 1/4 cup chicken broth
· 1 (6 ounce) can tomato paste
· 1 medium lime, squeezed for juice
· 1 tablespoon flour (mixed in 1/4 cup water)
· 3 tablespoons chili powder
· 2 tablespoons brown sugar
· 1 tablespoon ground cumin
· 1/2 teaspoon onion powder
· 1/2 teaspoon garlic powder
· 1/2 teaspoon each salt and pepper, or to taste

Directions:
1. In a large pot, sauté onions in olive oil until the onions are transparent.
2. Add four cups water to the pot and stir in remaining ingredients.
3. Cover and simmer on low for 3 to 4 hours, stirring occasionally.
