Deviled Egg Spread

· 1 dozen large eggs, hard boiled
· ½ cup mayonnaise
· ½ cup sour cream
· 1 tablespoon yellow mustard
· Salt and pepper, to taste
· Paprika for dusting
· Crackers


1. Remove the shells from the hard boiled eggs and half them lengthwise.
2. Coarsely chop half the egg whites and transfer them to a large bowl.
3. Add the remaining egg whites and the yolks to another bowl with mayonnaise, sour cream and mustard. Blend until smooth. Scrape the mixture into a boil and blend in the chopped egg whites. Season with salt and pepper.
4. Put mixture into a serving bowl and sprinkle with paprika. Best if chilled for a couple of hours. Serve with favorite crackers.
