Fried Cornbread

1 ½ cups self-rising cornmeal
2/3 cups buttermilk
1 egg
½ teaspoon salt
2/3 cup canola oil

Mix cornmeal, buttermilk, egg and salt together.
Heat oil in a medium iron or regular skillet. Drop batter by spoonfuls into the hot oil. Brown on one side and then turn and fry until golden brown on both sides.
